Noodles

Today I was feeling a little down in the afternoon and at the same time hungry so I thought for a change I will make something healthy and came up with this recipe. It turned out quite yum and yes I am back to my happy-go-lucky self! :D

Ingredients

Prawns (medium sized) - 6/7
Capsicum (medium sized) - 1
Carrot - 1
Onion - 1
Roasted garlic (5/6 cloves)
Green Chilli - 1
Noodles - 100 gms
Chinese Five Spice (cloves, cinnamon, fennel, black pepper, star anise)
Barbecue sauce
Red chilli sauce
Dark Soy sauce
Vinegar
Salt
Peanut oil (vegetable/rice will also do)

Method

Boil the noodles in some hot water seasoned well with salt and a bit of oil and keep aside.

In a pan heat one tbsp of oil and fry the prawns till they are golden brown. Lower the heat and add one tbsp of barbecue sauce, 1 tsp of red chilli sauce, 1 tsp of dark soya sauce, 1 tsp of red chilli flakes (more if you want more heat) and 1 tsp of roasted garlic. Saute till the sauce gets caramelised and then keep them aside.

Take a pan and heat 1 tbsp of oil and put the thinly cut onion, capsicum and carrot. Add salt and the split green chillies to it. Saute it the onions are slightly brownish. Add the 1 tsp of five spice, 1 tsp of red chilli, roasted garlic, 1 tbsp of vinegar and mix them well. Put the heat down and add the noodles to it and mix them well.

Serve it with the prawns.

I put it through my calorie calculator. It seems this one serving is about 370 cals! Not bad for an afternoon meal!
